Clean Healthy Turkey Meatloaf

Another snowy/slushy/gross day here in Boston! I love it here, I was born here, but these winters are LONG and I sometimes forget just how long they really are! In the middle of summer when its 100 degrees out, all we want is winter, and then in the winter, all we want is summer! This continues every year. You know what though? I am so thankful that I live in a place that I get to experience all 4 seasons! Spring, summer, fall and winter! 

As of late I have been super busy, as you can see from my sporadic blogging and I find it hard to blog every single day! I have to hand it to those who blog 3 times a day! 
Some food I have been enjoying is this combo right here
That would be organic quinoa, plain greek yogurt and a half tablespoon of peanut butter. The combination of the nutty quinoa, the creamy greek yogurt, spicy cinnamon and rich peanut butter makes this the perfect snack-not to mention a great combination of healthy fats, protein and complex carbohydrates
Bring on the cinnamon. I have never had quinoa ‘sweet’ style before, but after making it and enjoying this combination the past few days I have come to the conclusion that it’s definately a keeper
Over the weekend, I enjoyed a ladies lunch out at one of my favorite places called 40 Carrots. You can see my past experience here The menu is big, loaded with lots of healthy choices such as “no mayo white albacore tuna salad” and “grilled turkey burger, on a whole grain bun” I also love it here because of the fresh squeezed vegetable juice
There were 3 of us and we split a 16 oz “Garden Patch” which contained beets, parseley, cucumber and carrot. I told them to go easy on the carrot. Look at that beautiful color!
The 40 Carrots salad is my go-to lunch here. It is chopped romaine with grilled chicken, chickpeas, tomatoes, cucumber, cauliflower, avocado, gruyere cheese (which I opted out of) and comes with balsamic vinegrette dressing (I got balsamic vinegar on the side) and I also added some quinoa (yes, from my purse–welcome to show prep) to the salad! 
It hit the spot!
Other dinners have been my homemade clean turkey meatloaf (Recipe at the bottom) And 3rd night in a row with kale chips. Yes I am officially addicted. I sprayed olive oil spray all over the torn kale pieces and sprinkle on some nooch.
The BEST Clean Turkey Meatloaf. Ever.
Ingredients
  • 1.5 lbs 99% lean turkey breast (can use beef)
  • 1 C chopped onion
  • 1 C frozen spinach
  • 3/4 C salsa (I used Trader Joes roasted garlic-it was what I had on hand and the garlic gave it a nice flavor)
  • 1 egg (or 2 egg whites)
  • 1/3 C oats
  • 1 tsp paprika
  • 1 tsp ground mustard
  • 2 tbsp dijon mustard
  • pepper to taste
  • 2 tbsp worchestire sauce
To-do
  • Preheat oven to 350 degrees
  • spray a loaf pan
  • Combine everything in a bowl (only use 1 T worchestire sauce and 1 T dijon) the rest is for a topping. Mix with a fork or with clean hands. Mix until well combined, but only until well combined-do not overmix or meat will be tough!
  • Place in the loaf pan
  • Top the meatloaf with a mix of 1 T dijon mustard and 1 T worchestire sauce (spread over the top)
  • bake at 350 for 1 hour (or until meat is cooked through)

    I just made this and it’s awesome. It’s really good if you add a little grain mustard on your plate and use it as a dipping sauce.

    I found your recipe recently while researching turkey meatloaf recipes. I used it as a base, even used the Trader Joes Salsa. I used wheat germ and flax seeds instead of oats, plus added a few extra ingredients….turned our delicious!!
