Love Yourself

Hey! How is everyone’s Monday going? How was your weekend? Mine was JAM PACKED to say the least. I had a pretty amazing weekend filled with love, tears, happiness, inspiration and self love. This weekend made me realize a lot not only about myself but about others. I was at the CSF studio all weekend for Camp Savage. We learned everything from the inside out not only about competeing but about self love, respect and determination.

A reason why this was such a special and moving experience was because we really focused on one another in a way that I never have before. I came into that room not knowing one single person (well maybe a few) but I left knowing 80 beautiful women. Every single woman in that studio had a different story, different life, different upbringing and different path as to where they are today. We listened, we cried, we danced and we hugged (a lot of hugs!)

Self love was a big topic during this whole weekend. Self love means changing anything in your life from something negative to something positive. We spoke about the power of positivity and how much it can effect one’s outlook on life. Simply smiling, giving a co-worker or friend a compliment–all things that we can do each day to make it that much brighter and more positive. It is about feeling worthy of what you want in life and the goals you set. You are the only one in charge of your life and what you want, you can get-no matter what all it takes is determination and self love

The weekend: Before I left, I knew I was going to not only eating a lot of food because of the constant workouts and energy the whole weekend, but I was also preparing most all of my meals to bring with me! I roasted up 2 zuchinni’s and a bag of brussels sprouts. I roasted them in the oven at 375 degrees for about 30 minutes (flipping halfway) They are simply sprinkled with some Mrs Dash


I also cooked up one pound of chicken breast. This was marinating in some chiptole salsa for 24 hours. It was so yummy and flavorful! (Tip: I like to pound the chicken to before marinating, it really tenderizes the chicken and helps it to seap up all of those flavors of the salsa and makes it juicy as can be!)
I also cooked up some oatmeal to have!

Cathy and the beautiful Lindsay Messina (Yes, she is as beautiful in the magazines as she is in person and so super nice) Not only was Lindsay there, but Lori Harder, Amber Ameredes, Gretchen Coley and Annette Perry. All of these women are beyond beautiful, sweet and normal gals like you and I. It was so amazing to hear them speak and listen to their stories.

It was fun, challening, emotional, informative and quite life changing. There is something just so spectacular about being surrounded by 80 amazing, beautiful, different, focused women all who bring something unique to the table and all with stories to share. I felt empowered, strong, loved (and sore!)
Today:
I woke up feeling refreshed and ready to take on a new week. The camp was amazing, but there is always the ‘back to reality’ that we need to get used to again! I have food find that I have been loving lately, unsweetened cocoa powder!  Unsweetened cocoa powder is derived from cocoa beans, which are rich in antioxidants. Consequently, unsweetened cocoa powder contains many antioxidants as well. The many antioxidants, vitamins, and minerals found in cocoa include vitamins A, B1, B2, B3, C and E, pantothenic acid, magnesium, potassium, calcium, iron, zinc, copper and mangenese.
I have been using about a teaspoon in my oatmeal here and there and its delicious! I also love a teaspoon mixed with some unsweetened almond milk, microwaved for 30 seconds, add a few drops of stevia and you have yourself hot chocolate!
I also have been using a good amount of coconut oil, seeing as I have quite a large jar to get through and because it is growing on me more and more! I absolutely love it!!!
Teaspoon mixed in with my oatmeal! When coconut oil hits something hot, it turns to liquid, out of its white, hard form, so this is why it looks like there is nothing in the bowl, but its there!
And my lunch was packed to go. I mixed some olive oil and vinegar and threw it in an old spice container
Some roasted veggies, baby spinach, red pepper, cucumber, mushrooms, grilled chicken and sweet potato!
Oh and have I mentioned we are getting more of this? I. Can’t Wait. SUMMER NOW!
