Hey guys! Wow it feels like forever since I posted! I really want to focus on quality over quantity on my blog, so that just means when I DO post, its all good stuff. I could update everyday, but to be honest, I am quite boring so I would rather post when I have good stuff to share!
Breakfast Saturday morning was fabululous, as it always is. I will never ever get sick of oatmeal, I really don’t think I will and its sort of a scary thought! Well, not really
I made a bowl of oatmeal atop 1/2 C liquid egg whites and some frozen berries. The oatmeal had tons of cinnamon and a few drops of vanilla stevia
Coffee. Necessary because well I’m an addict
Saturday I hit the gym after my breakfast for some steady state cardio. I used the Arc Trainer, which I usually don’t use but I figured i would switch it up. I used this machine for 30 minutes. I varied up the resistance and inclines, but generally stayed in a steady state work range. It was not a crazy hard interval workout. After the Arc Trainer, I finished up reading Cosmo on the treadmill, walking 3.8 speed at 8.0 incline for 15 minutes!
Later in the day, my friend and I did some damage shopping (well, she mostly did the damage because I introduced her to designer jeans and Lululemon) Saturday night, I had one thing on my brain—PIZZA. For my ‘cheat’ meal this week (which I really hate to call but given the circumstance of my training for my competition it is a cheat to me) We made homemade whole wheat pizza! I turned to my facebook page asking for a homemade whole wheat crust we could make, and of course Jessica responded right away. We had all of the intentions of making it from scratch but the day just sort of got away, and we ended up being lazy and buying some pre-made dough from Trader Joes
I chopped up some orange pepper, mushrooms and grilled chicken
I let the dough rise for about 20 minutes until it got to room temperature
You better believe I loaded mine up! It was topped with tomato sauce (from Trader Joes) orange pepper, mushrooms, grilled chicken, low fat cheese blend, baby spinach and some feta. I also sprinkled on some oregano and basil seasonings

Meanwhile I whipped up a quick spinach salad with cucumbers and mushrooms, topped with balsamic vinegar and some spicy mustard

Ok, so the pizza idea had potential, it really did, and I was SO in the mood for it. Pizza may be one of my favorite foods. I don’t mean greasy take out pizza, but really delicious, high quality pizza loaded with toppings–my favorite is acutally paper thin crust topped with arugula, pesto, parmesan reggiano cheese and some caramalized onion. The only problem with our pizzas is that we should have pre-baked the crust. It was still delicious, but the mddle was a bit raw, whereas the crust was a bit burnt. We had trouble finding a happy medium with this. We think its because we loaded it up too much? Either way, the toppings were awesome, and I did eat most of the cooked part of the dough which was great!
Sunday, I hit the CSF studio for posing and workout class. It was awesome, and I think that was one of the sweatiest workouts I have had in a long time! There is so much positive energy in the air because Mohegan Sun is less than 8 weeks away! (oh geez!!)
Later in the day, I had one of my new favorite combinations–hot sweet potato with melted coconut oil. This was also topped over a serving of Greek Yogurt.
Topped with cinnamon. The coconut oil melts immediately when it hits someting hot and this seriously tasted like candy!
Another great meal was had Sunday night. I cooked up a delicious Stirfry for two. I placed some fresh broccoli, snow peas, red bell pepper and zuchinni in the wok and cooked until almost done (still left a little crispy) When the veggies were almost done, I threw in the 8oz of fresh shrimp I picked up from Whole Foods. I covered the wok and let the shrimp cook through
For some reason I always think of these square plates as only being used for stirfrys. They just scream Chinese or Japanese food to me. All I need is chopsticks! I added some low sodium soy sauce at the end.
Another hit of a meal! Delicious! Stirfrys are such a good way to get in all of those veggies and protein all in one dish! I nixed the rice, but it would be delicious served over some Jasmine or Brown rice!

So I have been playing with my Mac computer that I have had now for about 2 years. I love it but really only use the internet, picture application, email, itunes and Microsoft Word. I know there are so many cool features on the Mac but I have never dabbled in even trying to figure out how they work.
Well yesterday, I played around with the iMovie application and figured out how to make some really cool movies!! You can add video’s or take still frames from a video or simple just use pictures! It is so awesome! I took one of my workouts (that you guys have already seen) and up’ed it into an iMovie
