Hey friends! Happy Monday…I hope everyone had a nice start to the week.
So I cried today. A good cry, don’t worry! I cried out of happiness and being so incredibly overwhelmed witht the amount of feedback and support I recieved over these past few months.
A while back I sent in my ‘transformation’ to Muscleandstrength.com. They have a feature where you can submit your own personal transformation. After I was approved they sent me a 5-6 page document to fill out in which I had to share my workouts, exercise tips, nutrition tips all while sharing my own personal voice.
Today, it was published on the website. Okay, so maybe this isn’t a huge deal but you know what…its a huge deal for me. I started my own personal trasnformation journey about a year ago (end of August, 2010) I submitted pictures to Cathy Savage Fitness with the hopes on getting on stage one day, and never could have imagined where It would take me to this day.
Throughout the entire process, I stayed true to myself. Of course I took tips and advice from others but honestly, what I found was the most useful ‘tool’ was finding my own way of making it happen. I never took silly supplements, listened to hokey workouts, or followed nutrition plans from magazines (which are not the best to follow because they are not meant for you. Sure, these meal plans can give you some great ideas to incorporate into your own personal diet…but not the whole meal plan itself.
My article was posted on the Muscleandstrength Facebook page, and the comments started coming in…some positive, some negative, and honestly…the negative ones do not effect me in the least.
One guy wrote: “I don’t get why she had to change”
To which I responded: “I didn’t have to change, I chose to change. personal goals, hard work and stayed focus until I achieved it…everyone has different goals!
I know the hard work I put it. It was NOT a cake walk to get where I am and I will always continue to transform my mind, body and soul.
I want to personally thank all of my followers, readers, friends and family for being so incredibly supportive and making this the most amazing journey. It can be so difficult to make your dreams a reality if you do not have a strong support system, and those in my life who were not supportive…well they no longer have the chance to get in my way.
Focus, Hard work and determination. NEVER let anyone get in your way of achieving your goals, because you may experience this. Those people will be threatened by your determination and will power, and try to bring you down or make you feel bad. Use it to FUEL you to work even harder! GET IT.

When I got home, All I wanted to do was make this salad that I had my eye on for this entire week. I was feeling postive, and so excited to get my hands onto some creative cooking!
This salad was inspired by Angela’s (Ohsheglows) Detox Salad.
Angela got the inspiration for her salad from one she enjoyed at Whole Foods. Well, either way, I was a huge fan of the way this salad sounded, came together and the beautiful flavors. I was all about this salad tonight! I also love the idea of shredding veggies such as these for a whole new texture and flavor experience.
***Because I didn’t know how it would turn out and because I was not following Angela’s recipe to a “T” I didn’t really measure the ingredients so bear with me.
My recipe is at the bottom of the post
I started by shredding raw cauliflower and broccoli in the mini food processor
I just put in a little bit at a time, closed the top and pulsed it for about 30 seconds on and off.
Up next was the broccoli. This is post pulsing
And big ole carrot went into the processor as well!
All done and ready to sit and wait to be eaten!

Shredded Veggie “Detox” salad
Ingredients
- 1 small head of broccoli (no stems–save them for something else though!)
- 1/2 head of large cauliflower (only the ‘florets’ not the stems)
- 1/2 large carrot
- 1/3 C dried cranberries
- 2 T fresh dill (you can use another spice if you like such as parsely, cilantro etc)
- Juice of 1 large lemon (fresh!)
- 1 crushed clove of fresh garlic
- 1 T Maple syrup (for sugar free use sugar free maple syrup)
- 1 T red wine vinegar
- 1 T olive oil
- Pinch of stevia (optional)
- Kosher Salt and pepper to taste
- Optional: sunflower seeds or almonds or walnuts or pecans
Directions
- To begin, Cut the stems off of the broccoli and cauliflower and you can process in a food processor, shred on a grater by hand OR finely chop by hand. I used a food processor because I happen to have one, but the other options will work perfectly as well
- Process or grate the cauliflower and transfer to a bowl.
- Process or grate the broccoli and transer to the same bowl as the cauliflower
- Process or grate the carrot and add to the veggie bowl
- Add crushed garlic, cranberries to the veggie bowl
- In a seperate small bowl combine the olive oil, vinegar, maple syrup, stevia and lemon juice. Whisk and pour over the veggie bowl
- Add in chopped dill (or other spice) and mix well
- Add salt and pepper to taste
- Before serving feel free to add any nuts or seeds such as sunflower, pecans, walnuts or slivered almonds
- The longer it sits, the better it gets so make this ahead of time!!
