Groceries, Baba Ganoush and a New Workout

Heyyy….Want to see what I got at Trader Joes today? I realize I haven’t done one of ‘these’ posts in a while where I share my groceries…personally because I think its quite boring to see what other people buy at the grocery store…however, I do realize that some people actually do like looking at others‘ goods This was not really a ‘usual’ haul for me. I just popped in to get a few things, but this is in no way my ‘food for the week’ I have never grocery shopped in that way. I go to the store when I need to go to the store. I rarely have a list, I go in for what I need (and then some) and if I need to go back 1,2 or even 3 times during the week, its fairly easy for me to do so since I live close by. 

The reason why I don’t do one huge haul on only one day of the week is because I am not the best when it comes to meal planning. I never understood it because I like to eat what I am in the mood for when I am in the mood for it. I cannot plan on Sunday to have turkey chili on Thursday.  The most I can do is plan out what I will have for breakfast and lunch on Monday but that’s about it. My body doesn’t work that far in advance, if that makes sense. Onto the groceries, shall we?

  • Cottage Cheese
  • Feta Cheese
  • Valencia Peanut butter with flax seed
  • Champagne-Pear Vinaigrette
  • Roasted peppers
  • Dill
  • Lemon
  • Greek yogurt
  • Kale
  • Butter lettuce blend (my favorite)
  • Bosc pears
  • Mushrooms
  • Chicken breast
  • Strawberries
  • Eggplant
  • Frozen blueberries and asparagus (unpictured)
  • Whole wheat Tortillas (unpictured)

Peanut butter, champagne-pear vinaigrette, peppers and dill
Feta, cottage cheese, lemon, strawberries, yogurt
Kale and butter lettuce blend

Another grocery item I am currently in love with (not purchased at Trader Joes) are mini Ezekial wraps. I have always enjoyed Ezekial bread but I have never tried the wraps. Why? I have no idea. They are delicious!
They look like this and can be found in the freezer section of Whole Foods (thats where I found mine)
And this is what I have been doing with them. Toasted for a few minutes, topped with grainy mustard, baby spinach, avocado and house roasted turkey breast from Whole Foods.  An Ezekiel Taco! 

Back to my Trader Joes Groceries….

I usually never buy eggplants because, honestly they just don’t do it for me. They’re ‘ok’ and I’ll eat them, but they are by no means my favorite vegetable. When I was in Trader Joes I got inspired to make Baba ganoush, which is basically hummus but instead of chickpeas, its made with roasted eggplant. It is a extremely easy recipe yet filled with flavor.
Baba-Ganoush
Ingredients:
  • 1 Eggplant, halved
  • 1-2 Cloves garlic
  • 1 T tahini paste
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 C fresh lemon juice (about the juice of 1 large lemon)
  • 1 T olive oil
  • Few shakes of cumin
Directions
  • Preheat oven to 400 degrees. Cut the eggplant lengthwise and place on cookie sheet to roast for about 40 minutes or until fork tender.
  • Let the eggplant cool. Once cooled, scoop out the insides into a food processor, blender or magic bullet
  • Add the remaining ingredients
  • Pulse until well combined.
  • Place in fridge to cool until ready to eat!

So ridiculously easy, simple and healthy! Its a great alternative to hummus and has somewhat of a nutty flavor. You could spice this up by adding roasted red peppers or other veggies/spices/herbs…let your mind get creative!

I have put together this workout, which is a total body workout based on time. I have combined strength movements with faster paced plyometric movements to increase the intensity. Always remember to listen to your bodies. You do not have to follow this workout to a “T” Modify if you need to, decrease time, reps, weights etc.

It is broken down into 3 mini circuits. 
Lower body
Upper body
Core

With each circuit are 4 exercises. The exercises go back and forth between 1 min of work and 30 seconds of work (1:00 min for the strength and 30 seconds for the plyo) If you find this is too easy, feel free to bump up the time, but also keep in mind you will be going through each mini circuit 3 times.

    I do one major shop and a couple mini shops for things i forgot! I plan dinners but adjust which days we have what based on how im feeling!! I will be trying those wraps!

    I do one big shop for essentials like meat, eggs, oats and rice, and then go back once or twice a week for vegetables. I pretty much eat the same thing week in week out so it’s hard for me to forget anything at the store!

    I wish I was better at meal planning for the week; I always have the best intentions of cooking up large batches of things on the weekend, but when Saturday and Sunday roll around I usually end up distracting myself with other things that seem like more fun at the time!
