I AM BACK! Potato Latke Recipe, Workout, Updates!


HEY!!!!!!!!!! I missed you all so much but more importantly I have been missing my blog. Some of you may have noticed that over the past few weeks, when you visited www.OneFitFoodie.com it took you to a parked webpage that was clearly not my blog. I have been working tirelessly to get all of my domain issues sorted out. When my renewal on my web page was up (after 2 years) I needed to update my credit card that was on file because it was expired. What happened was that I did not do this soon enough and almost instantly, another registrar ‘bought’ my domain name, onefitfoodie. They were not doing anything with it-as it was just a ‘parked page’ They were basically holding my name until I was going to buy it back from them. I was in a bidding war with this registrar domain who was holding my name and my domain alone got upwards of $8,000. I get that this is how some businesses and companies make money. I get that they were holding onto my name expecting that this is my one sole business and I would give up a million dollars to get it back, however, this is also a nasty, scam to do. I set an allotted amount of money I am willing to spend to get my domain back and when it went from the number that I requested to about $4,000 in one day, I simply had enough of this nonsense. I am not a millionaire. I am not made of money.

Since I founded Onefitfoodie in 2009 as a little ‘health’ blog, it has been my life, my heart and soul and my pride and joy. I am very protective of my website, has so much love for  each and every one of my readers and have completely transformed onefitfoodie from some little blog documenting daily eats, workouts and personal life experiences to a more professional approach encompassing articles, tips, recipes, workouts, advice and of course always some fun thrown in the mix.

 You may notice that I do not post everyday, nor is that my aim. I see some blogs out there that post 2 even 3 times a day. This is not my main intent. Why would I bombard my blog that I put so much time and effort into with meaningless posts just to post.  When I am inspired about a topic, make a delicious recipe, have an awesome workout, find an interesting article I want to talk about, take part in an incredible experience or event–THIS is when I post. I aim for 2x a week; quality over quantity. If I make it 3 times in one week-that’s great! The truth is, I have a full time job and running my blog is a hobby. A hobby I do not know what I would do without. It is truly biggest pride and joy. It makes me whole. 1Fit Foodie is me! I don’t make pennies from it and I certainly have turned down plenty of free swag and food because I simply don’t have time to sit in front of a computer after I receive these products to review them, write a giveaway, track who enters etc. I try to make my blog as laid back, non-controversial, information and relate able as possible.



When I found out what happened to my domain I had many emotions running through my head. Why would this happen to me? Who would take this name from me? Why are they doing this? What am I going to do now? How will I tell my readers. I honestly felt a bit violated. I became so attached to my blog, I felt defined by it in a way. I also realized something else throughout this whole process; There will ALWAYS be a solution to any problem that arises. So, after many tears and hours on the phone with GoDaddy days upon days, I decided that even if I have to change my website name in the slightest, this will not change who I am, what I stand for or what I want to portray.

I want to extend my appreciation and love for ALL of you for sticking with me through this. It was a rough few weeks regarding my blog but I found the solution and everything is 100%!

I have a new domain name and that is the ONLY thing that has changed. The content, site, information and fun will ALL still be right here


I changed my twitter to www.twitter@1FitFoodie. If you followed me already, I simply updated my name-you have to do nothing, I just wanted to let you all know!

As some of you know we are right in the midst of HANNUKAH!!
I love this time to get together with my family and celebrate the holiday while helping my mom cook up some amazing potato latkes! 

The recipe my mom has is not complicated, in fact it is pretty easy to remember by heart! It is a traditional ‘no-nonsense’ potato latke recipe!

Traditional Potato Latke Recipe
Yields: 10-12 medium sized pancakes

Ingredients:
  • 2 russet potato
  • 1 large onion
  • 1/2 C flour
  • 2 large eggs, beaten
  • 2 tsp salt
  • pepper to taste
  • 1/2 C canola or peanut oil
Method:
  • In a food processor, grate the potato’s and onion. Transfer to a paper towel or cheesecloth and squeeze out all excess liquid for a few minutes. (if using a paper towel, wrap the potato in a jelly roll and squeeze tightly)
  • In a large bowl, whisk flour, eggs, salt and pepper. Add in the potato/onion mixture into this same bowl and mix well until combined. 
  • In a large skillet, heat about 1/4 C oil of choice until it is slightly bubbling. Drop the mixture by the spoonful into the skillet and slightly press them down with the back of a wooden spoon.  Cook over medium-high heat until the edges begin to brown (should be about 2 minutes) Flip and cook the other side until golden brown. 
  • Lay out paper towels on a cookie sheet and when the latkes are finished, transfer them to the paper towels. 
  • Repeat the same procedure until the mixture is finished. Add additional oil as needed!
  • Top with applesauce and sour cream for a traditional delicious side dish!
OPTIONS:
You can sub 1 white potato for 1 sweet potato. 
You can add in some shredded zucchini
Add in some Parmesan cheese for a ‘twist’






They were smelling and looking SO amazing at this point, we had to go in and grab a taste!

The final product!!We made half regular and half sweet potato with a bit of shredded zucchini. The regular potato ones were MUCH crispier and had a bit more flavor. When it comes to certain dishes and ingredients, its best to not mess with a good thing!! White potatoes for the WIN in this recipe over the sweet!
Of course we recognized the pup’s first Hanukkah!! This is my brother lighting the candle with his and his wife’s puppy, Cai 
And one of the best presents I have EVER received from my parents. This ad was for the company that I work for and it is on many of the MBTA trains in Boston. My dad  jumped through major hoops to get a couple copies of the ad that was on the trains. Once he was able to get his hands on them, my mom got them framed and TAH-DAH. They kept one for themselves and gave me one as a gift. I was so shocked, taken-a-back, quite emotional actually. This is one of the most meaningful gifts I have ever received. It represents so much more than an ad. I worked harder than I have this past year than I ever have in my life. I have truly found my niche. I cannot imagine doing anything else and even though I work an insane amount of hours each week-it is some of most fun, challenging and rewarding hours. Now the next question is where the heck am I going to hang this thing?!
Speaking of rewarding…This is one of my clients, who I have talked about on the blog before. I have been working with her for a little over a year and her strength has SKY rocketed since we started back in 2011. She is kettlebelling, squatting and we recently learned how to BARBELL deadlift. Her form is spot on and she can easily kick my butt in most sessions! She deadlifted here 95lb for 15 reps. 2 sets. Today, we bumped it up to 115lb for 8 reps and next week, we’ll move up! She is such a rock star!
And I couldn’t be more happy walking to work looking at all of the beautiful lights in my neighborhood! It is such a nice way to start the day.

    Ahh I can’t believe that happened to your domain name; what kind of shady scam is that?!? And $8000 to get the domain name back? People are crazy, I tell ya. I’m glad you’re back though, and glad you were able to come to a decent solution without having to spend tons of money or having to totally start over with your blog! On another note, that is such a great gift that your parents gave you, you should be so proud!!

    so glad you’re back!! i have never really commented before but and didn’t have the site bookmarked so when i was typing in onefitfoodie.com and it was bringing up that weird page i was convinced i was doing something wrong! haha i’ve really been enjoying the workouts you’ve been posting lately (they seem a little different then some of the previous ones but it could just be me!) and i absolutely love them. so glad you were able to make another page. happy holidays!

    I have been following this drama out of simple curiosity. Although I can’t speak to the intentions of the person who purchased the domain, I can speak to what happened. (although I am sure this post will be removed like the last one)

    On November 18th, I emailed onefitfoodie.com about their site being sold, at auction, on Godaddy. Godaddy does this with domains that have expired due to lack of payment, as explained above.

    Then again on November 22 and again on November 30th I posted on their Facebook which are still there. On November 23rd on their Twitter account.

    I buy domains all the time and either use them or resell them back at auction. However, I did not bid on this domain. People buy and sell at auction all the time in the physical world as well as digital. Nothing evil.

    In the end, the domain could have been registered again at the $10/yr. rate up to one week after the auction closed. It’s part of Godaddy’s terms of service agreement.

    I guess the lesson learned is, keep all your records in order, set calendar appointments up for when domains expire, and when someone is desperately trying warn you of something, LISTEN!! Don’t just delete their post, all I was trying to do is help, and well….

    That is RIDICULOUS! I can’t believe someone bought your blog and tried to make you pay for it- ridiculous! I think you did the right/best thing to start a new website!!! SO sweet that your parents got the ad for you. You are just looking slammin! mmm latkes 😉
