I promised you all a foodie filled post so that is JUST what you are going to get??
how was everyones day? Mine was just lovely! Woke up and had a nice bowl of oats which hit the spot! I have been using my new trader joes PB with flax! I bought this because the jar and description was strikingly similar to the Naturally More PB. Now, although my heart lies with the Naturally More, I have to hand it to Mr. Joes. This PB is awesome! it doesn’t taste like the NM but it is so velvety and rich and large chunks of peanuts!! I couldn’t even taste the flax in here!
9g of protein in this baby!! the color is so rich and yummalicious!!!
Some coffee with my favorite TJ’s soy creamer
This was my lovely bowl of Oats this morning using the PB
in da mix
- 1/2 c oats
- 1 1/2 c water
- 1/2 banana sliced in the pot
- 3 frozen strawberries diced
- handful frozen blueberries (added at the end)
- packet truvia
- chia seeds
- TJ’s valencia PB (i certainly used more than this, I just perfer to have the PB on the side, and dip in the PB, then dip in the oats, ya dig??) rather than all drizzled on top!
This fueled me for the gym! I was quite sore today from my workout yesterday, SO I started off with 10 minutes on the step mill (the BIG stairs) this thing really pumps up my heart rate, I can be sweating after just 10 minutes! especially since my gym just LOVES to crank the heat!
After that, I did some light legs (backward lunges, plie lunges) and some arms (biceps, shoulder, delts) with some jumping jacks and burpees in between sets!
Came home and made a delish POST WORKOUT SMOOTHIE!
-i was rushing and didn’t have time to take a pic BUT it consisted of
- 1/2 C frozen mango
- handful frozen raspberries
- 1/2 C almond breeze
- water/ice
- few slices nanner!
- packet truvia
Lunch time rolled around a few hours later at work! I was super siked because I had a yummy salad in store!!
- romaine
- cukes
- cauliflower
- carrots
- chickpeas
- red pepper
- walnuts
- sliced TJ’s low sodium turkey breast
- broccoli
- home made dressing using the apple cranberry chutney!! (chutney, dijon mustard, rice wine vinegar, EVOO)
Snack time was made this morning before work. I got a bit creative here so bare with me. It may sound strange but I have made it before and it is sooo good!!
This is the first step which is dicing up a veggie burger and cooking it thoroughly. I like the
Boca Vegan veggie burgers (I am not vegan but I think these are tasty!)
Naomi’s Boca Suprise!!
- Keep the veggie burger in the pan
- add 3 eggwhites
- I added broccoli, but any veggie of choice would work!
- cook it fully
- put that mix in a tupperware and off to work it goes for my 5pm snack!!
I could not take a picture of my dinner, as we are not supposed to take pictures at work BUT when I came home I munched on some yummy melon!
Now normally I am not a huge melon eater, don’t get me wrong i LOVE all fruit and do not discriminate, BUT if I were to go grab some fruit, Melon would not be my number 1 choice. This melon was so juicy and sweet! it tasted like candy!! (ok well ALMOST like candy!!)
I also had a few bites of Friendship whipped cottage cheese. I wanted to take a pic of it to show you how it is different from regular cottage cheese. In my opinion it is creamier and SO delicious!!
see how it is soo smooth!! (sorry for all you bloggies who dislike cottage cheese!!!) I am a HUGE CC fan, so I had to snap a shot!!
one of my favorite recipes using the whipped cottage cheese
Pumpkin “ice Cream”
- 1/2 C whipped cottage cheese
- 1/4 C canned pumpkin
- pumpkin pie spice
- cinnamon
- Truvia
- mix all together and stick in the freezer for about a hour and eat!!
also sipped on some gingerbread tea with almond breeze!!
This is a lot of tea in a HUGE cup, thats why it doesn’t look full!

I am going to start making some more of my own dressing at home (I was waiting until my brand new salad spinner arrived at my house, lame excuse, but totally true-I have a small kitchen so this really helps keep the mess and water to a minimum). Your dressing looks great.

I love your pumpkin ice cream idea!! I made actual pumpkin ice cream the other day, but your recipe is a bit easier, and probably higher in protein 🙂 I sitll have to find some pumpkin! Ohio is pretty much out of it, ugh.
Great looking salad, and I like TJ’s peanut butter. I did a post on it one time. I think it’s not the same creamy taste, with roasted nuts, that I’m used to, but it was a great change! And I love that it’s cheap and has ALA fat. Can’t beat that.
I love cottage cheese. I mix it with everything from oatmeal to veggie burgers (kind of like you do with the egg whites).

The pumpkin “ice cream” wouldn’t be bad. I’m going to try it. One of my fave diet desserts is ricotta with vanilla flavoring, a spoonful of cocoa powder and a packet of splenda. But you gotta love cottage cheese. (my father used to eat cottage cheese with sugar on it- shock- but he lived to his mid-90’s so he did something right!)

That Pumpkin “Ice Cream” recipe looks great. So creative! I have been eyeing this nut butter at TJ’s for awhile now but have to try it. Maybe once I finish my Barney Butter. I hear ya on the shipping costs, it’s rough but when you need a fix it’s totally worth it 🙂

I LOVE pumpkin + cottage cheese! I had a friend in college who thought I was so weird the first time I ate it in front of her, and then the next minute she was helping herself to a portion!
Re: VitaMuffin question: I like the bran flavors best (Apple Bran is really good) but if you want something more like cake, I’d go for the Double Chocolate Dream flavor.
I wish I could get the Whipped Cottage Cheese in the Midwest, we can only get normal and I hate that!
