Hey my bloggies!! How is everyones weekend going? Mine is just non stop, well until about now when I have had some time to breathe! Yesterday as you know, was my SPIN certification! It was 10:30am-7:30pm, but we got out around 10 to 7 which was nice. The day FLEW by, the presenter was amazing. She had such great speaking skills and she was funny too so she really connected with each and every one of us. I met some great girls around my age too, exchanged numbers, I was super psyched for this, I am always looking for new people who share my same interests to hang out with!
To start the day, I obviously brought lots of food with me! There is a Panera right near the gym, but I would have rather brought my lunch and snacks-tastes better and save some major $$
(obviously, more than I would have needed! I like to be prepared, ya know?)
Cashew Cookie Larabar , Strawberries, Kays Natural Honey Almond cereal, Nutz over Chocolate Luna Bar, Baby carrots, Fage 0%, banana, apple, string cheese
I packed some of these in a baggie- (I received a HUGE package of delicious Newmans Own Organic goodies which I will get to in a bit!)
Main Lunch- Josesphs Lavash wrap with low sodium turkey breast, horseradish hummus, tomato, baby romaine, lite havarti cheese
I ended up eating Luna bar before our first ride around 11:30. Then for lunch I had the wrap, Apple, Carrot sticks and Newmans Own Cinnamon Soy Crisps. Then before our second ride I had the banana. After the workshop on my way to Jasons I had the string cheese and strawberries. I didn’t end up eating the Larabar, Fage or the Kays Natural Cereal.
Not only was the certification well done, but extremely informative. I learned a GREAT deal of information about heart rate and spinning and aerobic base building and class construction.

The class ended with a great ride taught by our instructor. She told us about this great website to go to and download, so we can mix our own music. her playlist was great and she was so motivating. She teaches 21 spin classes in 3 days!!! This instructor really knows her stuff and was amazing!

PACKAGE TIME!
I received 2 beautiful, filled to the brim packages from 2 amazing food companies! I am so thankful from the folks at Newman’s Own Organics and Vitalicous for sending me some of their goodies!!

Organic Cinnamon Soy Crisps. I brought these in a baggie with me to spin orientation. They were SOOO good! I finished my baggie and seriously wish I had more! They were not overbearing with sweetness and had the perfect amount of cinnamon. They are gluten free and have between 7-9 grams of protein in 1 serving! (depending on the flavor) I can’t wait to break open the bag of barbeque soy crisps!

From the looks alone i LOVED the peanut butter chips! There could have been a few more in there, because they were sooo good! As soon as I opened the pacakage whif of rich chocolate filled the air. I could tell this was a good first choice!
Look at how moist and chocolatey it is!!
From others suggestions on how they eat their Vitatops. I decided to make a little snack of greek yogurt mixed with some PB2 and a warmed up Vitatop. This was the greatest idea ever! I love how I brought out the peanut butter flavor using the PB2 in the yogurt and the combo of the warm chocolatey Vitatop with the cold tart yogurt was a great snack! The top stayed moist and chocolatey I would say there is an overbearing flavor of peanut butter in this Vitatop but it certainly was delicious!

AMy’s Organic Low Fat Vegetable Barley Soup…This is one of my favorite Amy’s Soups!
Amy’s Organic low fat vegetable barley soup
and a tuna Quesadilla
Layer 1-Josephs low carb wrap with tuna salad made with Dijon and diced celery
Layer 2-with sliced tomatoes
Layer 3 with mexican style Weight watchers cheese
Final product with a side of organic salsa and roasted red pepper hummus! (sorry for the terrible lighting)
Such a comforting meal for a rainy, dreary day!

Reduced guilt filet of sole served with spinach and fava beans. I am not normally a frozen dinner person, but the nutritional status on this looked good and it’s very convenient to bring with me to work one day this week!

I also cycle a lot outside in the summer and am training for a century this year…did 75 miles last year! And I think getting certified would teach me a lot to that would help my own cycling!!! Huge huge fan on pretty much all Newman’s products, I’m hoping I can still find a few more at the Whole Foods here because PUblix doesn’t ahve much.
