Product review and Homemade Granola Recipe!

Well, It seems as though I am having mucho issues with my google reader. I am fairly new to this and I have NO idea how to fix it, but apparently, my posts are not updating!! The last feed was from October 20th!! If anyone is good with google reader or would assist me in anyway I would GREATLY appreciate it!! Thanks to my lovely gals Mari and Janetha for pointing this out!

Ok onto more exciting things…Today started out with a great early AM run on the treadmill. I did 4.10 miles in just about 37 minutes (I pressed the ‘2’ instead of the ‘3’ so it looked like 4.10 miles in 27 minutes not 37 at first HAHA, yeah right…maybe one day…sighhh) So, had a great run, I am still a bit sore from my workout with my trainer yesterday, But I do like to be active even when I am sore, it is important to get that lactic acid moving. I did not do any weight training today, just cardio. For my great exercise Q&A about recovery you can see it HERE

I was ready for this hot steamy bowl of oats

1/2 C oats, 1/2 banana, some frozen blueberries, flax seeds, Truvia, cinnamon, Justins  Honey PB
Yeah, this was as good as it looks. My body was happppyyyy.
Usually before a early morning workout I will take a bite of a banana just to get something in my stomach. If I am getting right out of bed and out for a run within 10 minutes I wont have anything, but because I work at 5 and run at around 630, thats 1 hour and a half of me sitting and by then, I am hungry!
**For those of you who do early morning workouts, do you eat before hand?**

large dollop pumpkin, greek yog, pumpkin pie spice, Kays Natural Honey Almond Cereal.
Yes, this again was as good as it looks….I LOVE Kay’s cereal It really does the job on making each bit of the yogurt nice and crunchy!

Lunch time was made when I came home. I wanted to ‘go out of the box’ today, inspired by miss Jenny’s thoughts on trying to incorporate different foods. SO I opted out of the normal, ho-hum wrap and went with this beauty
Open Eggplant Sammie
1 slice ezekial bread
garlic and herb LC
TJ’s Cranberry chutney
Romaine
Low sodium turkey breast
roasted eggplant on top

From this angle you can see all the layers starting from the bottom: LC, chutney, turkey, romaine, eggplant.
This was heavenly! WHY have I not thought about this ever before?? The combination of the toasted bread, cold turkey and hot, roasted eggplant was such an amazing flavor combo in my mouth. Each bite tasted different from the last, depending on what the dominant flavor was in there. Some had more of the chutney flavor, some had more of the roasted eggplant and LC.

I couldn’t wait to dig in! First up was the maple cinnamon flax crackers : These are high in fiber, protein, omega-3, and many other vitamins and minerals. This is the perfect snack to enjoy at any time of the day. Snack right from the bag, use them like bread for nut butter and jelly, crush them up and sprinkle them on your salad, yogurt, cereal or in your baked goods like muffins and cakes.

Foods Alive does NOT mess around! Look at the whole flax seeds that make up these crackers! You wouldn’t believe how good they taste! This flavor was sweet and cinnamony, but not overkill. It was subtle enough that a schmear of PB on top would just be the perfect snack. I knew what I wanted to do with this cracker right away!
Flax cracker yogurt mess: greek yogurt & cottage cheese combined with some frozen berries, diced apple and 3 crushed maple cinnamon Flax crackers….umm, I have no words, i am speechless but I will say that this was incredible!!! Try these crackers!!
I also used the sweet mustard dressing on top of my side salad with my eggplant sammie



You will never use another unhealthy salad dressing again! This is the perfect drizzle sauce for any dish, salad, veggies, etc… You can also use this Sweet Mustard flax oil as a replacement for mayo in most pasta/egg salad dishes, etc..

Look at the color of this dressing! it is such a vibrant yellow, it just really made me smile. The taste was not too sweet and extremely mustardy. It is sweetened with a bit of agave. I don’t like to assume that new products taste like something I have already had before, so I go in with no expectations. This dressing was great. Not oily at all. this was a full bodied, rich taste and I knew I was getting in my healthy omega-3’s at the same time! I just love multi tasking don’t you?

Then I got a second wind and decided to make HOMEMADE GRANOLA! I love granola and love the way it can stay crunchy for a long time. I have wanted to make my own for a long time but just never attempted it! I looked up some recipes online to get a ballpark idea of what to do, but ultimately I made the recipe myself! I was beyond impressed!!
Naomi’s Cherry Cinnamon Granola
Dry ingredients, nuts and seeds
3 cups rolled oats
2 tsp cinnamon
1/4 tsp nutmeg
1 cup chopped walnuts
1 cup roasted, unsalted sunflower seeds
Wet Ingredients
1/4-1/2 C warm water
1/4 cup honey & agave mixed
1 tsp vanilla extract
1 tsp maple extract (I just happen to have this on hand, you can get it at whole foods!)
Pour wet ingredients over dry, add 3/4 cup each of dried cherries and dried cranberries
Lay on cookie sheet
Bake at 300 degrees for 30 minutes, checking every 10 to mix it around with a wooden spoon
Let it cool and you got yourself some healthy, delicious granola!
ENJOY!
Naomi’s Cherry Cinnamon granola
  • 3 cups rolled oats
  • 1 cup chopped walnuts
  • 1 cup roasted unsalted sunflower seeds
  • 3/4 c dried cherries
  • 3/4 c dried cranberries
  • 2 tsp cinnamon (extra sprinkled ontop too if you want!)
  • 1/4 tsp nutmeg
  • 1/4 c honey or agave (I combined both)
  • 1/4-1/2 c warm water
Method
  • Place dry ingredients, nuts and seeds in one bown
  • combine wet ingredients in another bowl
  • pour wet into dry and mix with a wooden spoon. Add dried fruit and continue until it is all well coated
  • lay onto a sprayed baking sheet
  • bake at 300 degrees for 30 minutes, checking every 10 minutes and moving it around with the wooden spoon
  • Enjoy!

    UGH that sammie looks ta die faw. and look at you lucky duck with those flaxy samples!

    I work out SUPER early and the only thing I “eat” before hand is an Emergen-C hahaha. I just cant fathom thinking about eating anything that early and I just eat breakfast when I get home. I’ve heard that eating something before you go to bed helps with the morning but I’ve never done that before

    Hey Chickie =) I hope you are able to fix it… I’m not sure if you read my reply on my blog but I suggested that you ask april from foods of april because I think she went through the same thing when she got her own domain.

    Oh and in regards to eating before working out…this confuses the crap out of me. I never used to eat before my morning workouts because it was too early but then I heard over and over again that you should so like you I started to eat 1/2 a banana but I recently stopped. If I feel like I am starving than I will but I’m just going to stick with what works for me =)

    All I can say is, Google Reader is annoying. That happened to me once, and I did nothing. Then it popped up again. Huh? Don’t get it! But I hope yours get fixed soon!

    Eggplant is the best! It goes with anything. I love to put it in paninis!

    I used to get up at 4 and go to the gym at 5am. At that time, I absolutely didn’t want to put anything in my stomach. I think it’s okay to do whatever works for you.

    I wake up at 4:15 to workout and can barely get myself dressed nevermind fixing something to eat. I usually eat after I workout and shower. It’s usually by 7:30.

    preworkout i don’t eat (bad, i know but i get up at 5:30 a.m. and am not hungry & just wanna get my workout in). i eat lots & lots afterward though!

    The eggplant sandwich sounds delicious. I’ll have to put that on my must make list. And I so want one of the flaxseed crackers. I love flaxseeds as they remind me of my childhood…

    and i definitely don’t eat anything before I work out because I get up pretty early but afterwards I always try to get a good combo of carbs and protein!
