It truly is a winter wonderland outside. I enjoy snow, the beauty of it, the way it covers the trees and streets, but after about 5 or 6 inches, thats when it gets to be enough! However, growing up in Boston, I have seen my fair share of winter wonderlands.

Bluberry pancakes-Silver dollar style!
My famous oats (1/2 C oats, chia, frozen berries, 1/2 banana, cinnamon, Truvia)
*it was the perfect breakfast for a winter wonderland!

Yesterday me and my mom made some Peppermint Bark. I looked at a few recipes and ultimately we made it ourselves. The results were Phenomenal!
Crushed 12 candy canes
Sifted the canes from the peppermint ‘sand’ the sand will be used to mix into the top white chocolate layer
Melted 1lb of dark/milk chocolate and spread it out evenly on wax paper which was laid on a cookie sheet. Let the chocolate cool completely before spreading on the white chocolate layer (we stuck it outside on the porch-it got hard in about 3 minutes! TWSS)
Melted 1lb of white chocolate and stirred in SLOWLY (you don’t want to turn the white chocolate pink!) in the peppermint ‘sand’ I also added a drop of peppermint oil into the white chocolate
poured the white chocolate on top of the hardened dark chocolate layer and spread evenly on top
Top with the crushed candy canes.
Let everything hardened and then break into pieces of ‘bark’
Peppermint Bark
- 1 lb dark or milk chocolate
- 1 lb white chocolate
- drop of peppermint oil
- 12 candy canes
Method
- Crush candy cane pieces on a dish towel. When crushed, run through a sieve and separate candy cane pieces from candy cane ‘sand’ (see pic above) Set aside.
- melt milk or dark chocolate in the microwave stirring every 30 seconds. When melted, spread evenly on a wax paper coated cookie sheet into the desired thickness. Let harden completely
- Melt white chocolate using the same method. WHen done, stir in drop of peppermint oil and candy cane sand.
- slowly pour white chocolate over the hardened dark chocolate layer
- sprinkle candy cane pieces evenly over and lightly press in. Let cool and break into ‘bark’
Today…we will be doing LOTS of hanging inside but may venture out later for some errands. I have no work tomorrow (day off!) So this is my saturday, which I am not complaining about!

The bark looks fantastic. I’m sort of with Melissa too- I am not a HUGE chocolate person. But, I do enjoy some dark chocolate every now and again. Love that britt coffee 🙂 I’m thinking of making up some more right now. Stay warm

My mom used to make p-mint bark every year! And we too grew up in the midwest MN where 2 mins on the porch and it would get hard TWSS. -40 below ya know.
We never sifted, we used the ziplock baggie meets a hammer and pound trick. Whatever we got, we got. Yours are much more “refined”! Love that stuff!
I’m enjoying a winter wonderland here too! I ADORE peppermint – I kind of wanna make these after my Dad and I are done making our regular Christmas shenanigans!

Sssooo awesome that you posted this!! Peppermint bark is Austins fav and I totally forgot about it. It is on my to-do list now for sure. It looks awesome! Im usually more of a dark chocolate fan though myself. The snow looks absolutely gorgeous. I miss it a bit. Its 75 and sunny here. Kinda feels weird to have the christmas tree up when its so warm! aha. But on the days that it does get cold I like to warm up with some tea. I love the sugar cookie sleigh ride tea by celestial seasonings and Teavanna has some good ones. Theres a strawberry chocolate tea I love. Anyways Have an awesome Sunday girl!
