BBQ Chickennnn and the Best Almond Butter!

Hows it hanging??! How was everyones weekend? Mine was lovely! it was PERFECT weather here in Boston and I took full advantage. If you celebrated Easter, then I hope you had a great Easter weekend and your weather was as nice as it was here in Boston! I posted yesterday morning right before the fun started, so that is where I will start!
It was a motorcycle kind of Sunday.
We went to one of our Favorite riding spots in Concord, Ma called Helens. You will see much more of Helens this summer! I LOVE this restautant because each time Jason and I have gone, we have NEVER ordered the same thing. Usually if I fall in love with a dish at a restaurant, I will order it time and time again, but not at Helens. I have never double what I ordered and everything is mouth watering!
Chicken Fajita Salad. This was black beans, corn, avocado, red onion, grape tomatoes, grilled chicken and monterrey jack cheese served over baby greens




We sipped on some water and ice tea! Riding the motorcycle makes me so thirsty with all the wind in my face. 

Jason ordered the pesto turkey panini. This was buttered sourdough bread with fresh house made pesto, tomatoes, chedder cheese and turkey breast. We both do celebrate Passover, but I gave it up for a bite of this sandwich. Oh Em Gee. I need to re-create this! The only thing I would change are the pine nuts in the pesto and sub them for walnuts. I HATE pine nuts…don’t know why, I just do!

Ah yes, Helens is also known for their tart fro-yo. I have been on such a frozen yogurt kick lately, I think its driving Jason crazy. Oh well, i’ll snap out of it soon (maybe)

Half tart original and half mango with fresh blackberries. This was perfect! My body was craving this creamy deliciousness. We ate it outside in the sun!

We walked back to the bike to find this car parked about 4 inches from his bike. Jason was not a happy camper.  But we did manage to get out and make it home!

As soon as we got home I started marinating chicken breasts for our dinner. I wanted it to sit as long as possible! I pounded out some chicken breast (~1lb) and soaked in in BBQ sauce

TJ’s BBQ sauce to be exact. This is the BEST kind. So sweet and savory all in one.

I was craving some artichoke hearts, so I heated some up for our salad. (I bought them frozen at Trader Joes)

Grilled eggplant (sprinked with salt and pepper)

I hit the treadmill this morning for a great HIIT workout. I am getting really tired of all of this steady state  cardio and really want to mix it up! (my theory is mixing it up often will be the only way you will see changes in your body…well that and diet) Anyways, I followed this treadmill workout.

I believe this workout is from Janetha, however I couldn’t find it on her blog, or maybe I skipped it. I know I stole it from a fellow blogger, so if it was you Janetha, THANK YOU! 

WOWZA. I haven’t ever hit that high!! I think this workout officially kicked my butt! I ended with exactly 4 miles in about 36 minutes.

This was the star of my breakfast. One of my favorite Peanut butters out there is Naturally More Peanut BUtter. I got this as a sample from NM company and was hesistant to try it out. Let me explain, I am not a HUGE fan of almond butter (oh, the horror, I know) I much prefer peanut butter when it comes to nut butter, and I have not found a brand of AB that I truly love. I took one bite of this and never looked back. WOW, I loved it. It was nutty and crunchy and different from any other AB I have tried!!

I love you so much.

1/3 C oatbran cooked in water. Frozen blueberries and 1/2 banana added at the end (nuke for 1 more minute) topped with Naturally More AB.

Snack time around 11:30 was a Brown Cow greek yogurt and cinnamon.

And 1 organic gala apple!

Lunch was just devoured at home while watching Barefoot Contessa (Love her!!)
I toasted up a deli thin and slathered it with Ceders hummus-tahini blend.

I added lettuce, left over BBQ chicken breast, sprouts, honey mustard and some chipotle salsa (just a little bit because this stuff is spicy!)

Yummay. So good!! I love the combination of the BBQ chicken breast, and spicy salsa!

A simple side salad of romaine, carrots, red pepper and mushrooms topped with balsamic vinegar.

I have Jasons brothers wedding this weekend!! I am so so excited. It is a black tie event and I am getting my hair done and everything. I will be sure to take pics of the dress later this week and for sure lots of pictures this weekend! I do have 1 question. On Friday night I am wearing a black skirt, white (NICE) camisole and a coral blazer from Jcrew. I need to get a nice white camisole tomorrow and I am wondering what you gals (and guys) would recommend. I was thinking Banana Republic or Jcrew? Thanks in advance!

I am off to the gym for a weight training appointment with my trainer. Yes I realize this is my 2nd workout of the day. I have explained before that some days I do nothing and other days I work twice as hard, it depends on how I feel, my body cues, time I have etc. I did only cardio this morning because later is JUST weight trianing. I fuel properly and always LISTEN TO MY BODY. love you all!

  • What should I have for dinner tonight?
  • If you weight train and do cardio often…do you sometimes split up your workouts if time allows? Or if time did allow for you to do so, would you split up your workouts?
  • What is your favorite color? I was watching My Fair Wedding yesterday and the bride was OBSESSED with GOLD. everything was gold, or had gold in it…it was a bit much! (Yes, I love wedding shows!)
