Morning Guys! My apologies for no post yesterday!! Time slipped right by me, anyways, I am making up for it today with a GIVEAWAY (details at the bottom of the post!)
did anyone else hear the shocking (sarcasm of course) news about Vienna and Jake?!
I couldn’t see that one coming, or anything. I mean really. Anyways, Onto more important things instead of wasting my life listening to this gossip (which I do)
I made a fabulous smoothie yesterday, Perfect for a hot summer day!
- Handful frozen blueberries
- 3 frozen peach slices
- 1 scoop Vega Vanilla Almondilla
- 5 ice cubes
- 1 C almond milk
- water to get it moving in the blender
Topped wiht millet puffs for some crunch. Like Katie, I am all about textures with my food, I need that extra crunch whether it be on my smoothies or yogurt. It makes a world of difference.
I decided to make some black bean burgers for dinner! I couldn’t wait to try my hands at a new recipe. I sauteed up some carrots, red onion and bell pepper, along with 3 cloves of minced garlic
I mashed up 1 can of black beans with a fork and added fresh basil, cayanne pepper, black pepper, cumin, oregano, 1 egg, 1/2 C oat bran and kosher salt
I formed about 8 patties and baked them on a sprayed cookie sheet for 30 minutes flipping halfway

When they were finished, I topped it on a beautifully summer filled salad
- romaine
- mushrooms
- carrots
- red bell pepper
- goat cheese
- cucumber
- nooch
- Balasmic vinegar
I was surprised how ‘meaty’ these tasted! They filled me right up and were DELICIOUS! I love cumin, and I made sure to pack in in these burgers, so that flavor came right through. They also had a spice to them from the cayenne which I enjoyed. Definately a keeper recipe! (I updated my recipe page by the way!)
BOO YAH Black Bean Burgers
Ingredients
- 1 can black beans
- 1/2 T olive oil
- 1/2 Pepper (any color)
- 1/3 red onion
- 1/3 C diced carrots
- 1-3 cloves of garlic, crushed or minced
- 1 t cayenne pepper
- 1 1/2 t black pepper
- 1 t kosher salt
- 1-2 T fresh basil
- 1 T cumin (can use less, I just love it!)
- 1/2 C oat bran
- 1 egg
Method
- Mash black beans with a fork or potato masher and set aside.
- In a pan sauteed up the diced pepper, onion and carrot. Add garlic after 4 or 5 minutes
- Add the cayanne, black pepper, basil, salt, cumin, and oat bran to the mashed beans and incorporate well. Add the egg and incorporate.
- Add the sauteed veggies to the black bean bowl and mix until everything is well incorporated.
- Size out the patties on a greased cookie sheet (I made about 8) but you can make whatever size you desire.
- Cook at 350 degrees for about 30 mintutes, flipping halfway
- Enjoy!

Yesterday Morning I had a lovely bowl of Protein Oat Bran after Insanity. After this workout I felt like I had just walked out of the shower, I was THAT sweaty, it was really something to be seen. Anyways, THIS was something to be eaten. It was 1/3 C oat bran cooked with half water, half almond milk, 1 scoop of chocolate Sun Warrior Protein Powder, 1/2 banana, some blueberries and strawberries added in the end
I topped it with some sliced almonds
I used my new Blender Bottle to make iced coffee to go! It worked PERFECTLY!
Lunch was eaten in about 5.8 seconds because I had a meeting at work. I literally don’t remember eating this. I hate when that happens, I love to enjoy my food. Ezekial bread, hummus, sprouts, veg burger
I did get to enjoy my salad afterwards! I used fresh mint in here! I love fresh herbs
Ever ave one of those days where NOTHING satisfies you and you are hungry all day long? Even after you eat something? Well yesterday was one of those days. I wish I knew why that happens sometimes. I bought this bar for some extra flavor, calories and satisfaction! Odwalla super protein bar. This was my first Odwalla try. I really liked it!
As soon as I opened it, I smelled oatmeal cookie! (which is my favorite flavor, by the way) I loved it! It tasted like it too. It was a very dense oatmeal cookie tasting bar. I ate about half and have the other half for today!
