I am so happy you all liked the Beef Tagine with Butternut Squash and Moraccan Chicken recipes!! I am telling you, I was so happy with these recipes and already thinking of spin-offs I could do with them! For the beef Tagine, I was thinking of swapping the butternut squash for chickpeas and I think that would be just as delicious! I am having leftover Moraccan Chicken tonight and I am so looking forward to it!
Now onto another important topic in my life: Coffee. As you all know, I am quite the coffee addict, I mean who can blame me? I have an uncle who owns a coffee company in Costa Rica and my mom is in the coffee buisness as well. I don’t remmeber the last day I went without coffee (it was probably in college when I wasn’t feeling great the day after a fun night out and couldn’t stomach it) but other than that, it is part of my daily routine–like brushing your teeth or taking a shower. I wake up, brush my teeth, have coffee and breakfast. It is just part of me. I have been known to carry instant coffee in my purse– just in case
So you can imagine my excitement when I was one of the hundred people who won the Xpress Smart Cups from the amazing and sweet, Janetha! I was so freakin excited that I won this because well I truly am obsessed with coffee and all of the gadgets that come along with it! The Xpress Smart Cups are portable, single-use cups that create french press coffee anytime, anywhere! If you are a coffee enthusiast like myself, you know that there is NOTHING like Fench Press coffee. The deal with french press that makes it superior to normal ole’ brewed coffee is that French Press coffee is the best way to to experience the flavor and aroma because the coffee grinds remain in contact with the brewing water, straight from cup to mouth. French Press coffee captures the most of the coffee’s essential flavors and natural oils.
I tried it out this morning and I was beyond impressed! Just for you all, I documented the process from scoop to mouth!
The set comes with 12 cups, lids, french press picks and a cute little scooper for the coffee grinds!
I love this little scooper! It is already measured out to 2 tablespoons
I measured out a heaping 2 T of coffee grinds into the bottom of the cup
Meanwhile, I had the kettle brewing up a pot of hot water to pour over the grinds. When the kettle went off I simply poured the hot water ontop of the grinds
Cover the cup right away to keep all of the heat in there!
I prepared by putting the french press stick into its place on the top of the cup. Now I waited for 2-4 minutes (longer if you want it stronger)
After 2-4 minutes you press the stick down slowly and DONE! I added 1 packet of Truvia and some half and half afterwards. It was so easy and simple and I love that it was done all in 1 cup! No dishes makes me one happy gal
I was left with a perfect cup of coffee for me to bring to work all in a matter of 5 minutes. This will surely save me some money from stopping on the way to work to buy a cup of coffee! Lifetime supply? I want to be on that list!
Breakfast
This morning for breakfast instead of cooking the egg whites separately and eating them with my oatmeal, I acutally mixed the egg whites into my oatmeal to make one voluminous bowl! I also love the creamy texture it gave to the oats (these next few shots are iphone pictures so I apologize for the quality!)
I started with some fresh eggs. I cracked 3 egg whites into the magic bullet
I love the ‘little cup’ it comes with! Perfect for whipping eggs! After I whipped them for about 20 seconds, they were a fluffly consistancy
After the eggs were fluffly and the oatmeal was hot, I poured the eggs into the oats!
***Because I am neurotic and scared that I will get salmonella I cooked the eggs + oats again in the microwave for about 1 minute to ensure the egg was fully cooked through, I would recommend you do the same!
The final product is one fluffy, BIG bowl of oats! (keep in mind I only used 1/4 C oats which is half of a serving and look how much it ends up being!)
After I snapped the photo, I crushed a few walnuts to enjoy with the oats and berries as well. Gotta love those healthy fats!
While I was enjoying my breakfast I got to stare at this HUGE package we got from my grandparents in Florida! They sent us 2 cases of fresh Florida grapefruit, 1 case of oranges and 1 case of tangerines. HELLO CITRUS. I am good in the fruit department for about a month!
I already had a grapefruit today and it was DELICIOUS. I cannot wait to try the tangerines! I love citrus fruits, but for some reason rarely buy it at the store. I go for the pears, apples, and berries. I don’t know why! But I absolutely love these fruits and can’t wait to eat them up!
