One word to describe the past few days: ARCTIC. Wow, it is beyond that ‘enjoyment’ type of cold outside. This is the bitter type of cold that you don’t even want to think about walking out to your car in! I was skiing this past weekend in Vermont, and I can say I believe it was the coldest I had ever been while skiing. My body and legs were nice and toasty, but my face! (even with goggles, neckwarmer, head liner and helmet) was FREEZING cold! It was was a fun weekend getaway, but it was just brutally cold!
On our way up to the condo we were renting, I stopped so I could rent some ski’s and boots. Everything went smoothly, and after arriving to the condo (where my parents had already arrived about 2 hours earlier) everything was set for a cozy, hot dinner
There was a mesclun lettuce salad with yellow peppers, tomatoes, red onion tossed with a balsamic dressing
Fresh bread. Doughy on the inside, and crusty, warm on the outside. I stayed away from the bread, and had a glass of wine for my ‘treat’
The main course was beef stew that my mom cooked 2 days prior and brought up to the condo
The beef literally fell apart on the spoon. It was so tender and juicy. The key is letting it simmer low and slow
Beef stew + salad was the perfect dinner for such a chilly night!
After dinner, we lit the fire and played some board games. Have any of you ever played Cranium? It was my first time playing but it was a lot of fun! My favorites were the charade ‘acting’ cards. I rock at those!
After a nightsleep that wasn’t the best (lnog story short-I am a pillow snob. I sleep with about 7 pillows at home, and they are fluffy and amazingly perfect. I need good pillows to have a good nights sleep and these pillows at the condo were just ‘so-so’ Hence I did not have the BEST sleep) Anyways, coffee was there waiting for me right when I got up! With a cold day of skiing ahead of me, I needed something warm asap!
Coffee + oatmeal + egg whites + blueberries
I made some flax banana bread and apricot-walnut bread to take with us. They were a hit
Some skiing snacks. Mini Luna bar (it was so freakin cute! My brothers Fiance brought it and they were 80 calorie, mini size) and 100 calorie raw almonds
After a few hours of morning skiing we took our first break. It really astonishes me how much work goes into a day of skiing! It takes about 20 minutes to gear up. Then you’re hot, then cold, then stuffy, then you need to use the bathroom, then you’re hungry, then you’re thirsty. After all is said and done, it really does take a lot of work! BUT its fun, so we sacrifice the little things.
I got a small coffee + stevia and half & half during our break. I also munched on some raw almonds
We went back out for an hour or so and then it was back inside, to de-gear and grab some lunch. I bought half and provided half of my lunch. Before hitting the slopes, I stuck a small 3oz can of tuna fish in my jacket as well as a 1/2 cup serving of quinoa. I had plenty of room and pockets, so of course I was going to bring part of my lunch with me! I ffigured the cafeteria at the lodge would have some sort of salad, so thats just what I did! I bought a Chefs Salad (I took off the swiss cheese slabs and turkey pieces and gave them to my brother)
I was also impressed to see they had steamed broccoli! Yes, bring on the $5.00 side of broccoli
I mixed my tuna with some yellow mustard, dumped it on my salad with the quinoa and made a healthy lunch for myself! I was so happy that I decided to bring along the tuna can and the complex carbs. This just goes to you can eat healthy anywhere, anytime!
Clean up time!
On our way home, we stopped for lunch at a hole-in-the-wall diner (which usually have the BEST food!) this one was just okay, but it was still a riot, and always fun to see the decor and people!

We cracked up over the placemats on the table that had advertising posted all over them! This one said “Complete Outfitters for Man & Beast” haha
Jason ordered the “Hunter Special” Which was the most insane amount of food I had ever seen! It came on two different plates! It was two thick slices of french toast, bacon, 2 thick slices of homemade wheat bread, breakfast potatoes and 3 scrambled eggs.

It was a crazy big brunch! He had help from the rest of the table!
I ordered a garden salad with grilled chicken. It was your standard, diner, iceburg lettuce fair. It did the job, but was in no way memorable!
I asked the waitress for a side of steamed vegetables and her response to me was “we don’t serve vegetables on Sunday” This not only made me laugh because I ordered a salad, but also because the menu has plenty of options that included vegetables such as veggie omelets. I responded by saying “oh, don’t you serve vegetables in your omelettes?” She just gave me a blank stare. I asked politely if she could ask the cooks to throw on some veggies on the egg griddle and serve them on the side
I asked and I recieved! Onions, mushrooms and peppers on the side.
