Hey! Happy Monday and first day of spring…although here in Boston it hardly feels like spring. It is actually snowing outside. Yes, snowing. Its not even taht cold but the fact that snow is coming from the sky is just bringing back memories of this winter! I want sun and heat and beach! I think growing up in the Northeast makes you really appreciate summer!
My weekend was good! Productive, relaxing and of course filled with some delicious eats. I opened my freezer this weekend and realized I have a whole lot of tilapia. Yes, I will be eating white fish come close to show, but come to think about now, I hadn’t enjoyed tilapia in quite some time! I covered the flaky fish in Mrs Dash, italian seasonings, lemon juice and mustard (When I season things like fish or veggies, unless I am going for a specific ‘flavor’ I just throw on whatever seasonings I have and it always tastes good!)
Indeed it was! Flaky and delicious. I cooked it in the oven on broil for about 10 minutes. I enjoyed my tilapia alongside some roasted spinach and asparagus
The next morning I did a little experiment. I have been eating my egg whites with my oats for a while now, and recently, they have just been blah. I miss that fluff factor when it comes to egg whites and no matter how long I shake the egg white container, they just come out a bit flat. I decided to add some baking powder to the egg whites
And boy did these egg whites fluff BIG time! THe only problem here was that after, I added my berries and oats and nuked it again for about a min and the eggwhites kept rising so my oatmeal nearly overflowed! It was a delicious experiment nontheless!
Saturday morning workout was straight up cardio. I hit the stairmill for 30 minutes, and then did some work on the treadmill (sprints, incline walking etc) for 18. As much as I love my weights and I would consider myself more a ‘weights’ girl…sometimes sweaty cardio is just what ya need!
I enjoyed a great post workout meal after. It is currently my favorite snack of the day! Greek yogurt + quinoa + strawberries + cinnamon. Oh its so good!
And a Trader Joes Trip! These are just some of my boring goods. The fresh basil was so necessary. I have been dicing it up on everything including my salads! Yum!

And that my friends was the best salad of the week thus far.
So Saturday night, it was so on for a ‘cheat’ meal. Now my cheats are somewhat healthy but right now? They are considered a cheat for me. Since the only thing I want everyday is doughy bread and cheese, I figured pizza would satisfy this craving!
I made a side simple salad

Um it was good. Really good. The crust was thin and crispy, not too much cheese and the perfect amount of toppings. I ordered the “Supribiotic” with chicken and basil in place of cilantro (bleh cilantro) It was loaded with veggies, chicken and mozzerella cheese!
I will be back. Trust me.
Sunday morning was filled with sweat at the CSF studio. We got our butts kicked during class, then put on our heels and did our thing. It was great. Its always nice to go to the studio, catch up with the other girls who are competing. WIth energy levels dropping a bit recently its always nice to be in the presence of other girls who bring nothing but fire!
And Yesteday I went to my parents house for dinner for my dad’s birthday! It was a low key dinner, nothing crazy. I made a small salad to start
And I enjoyed some fresh flounder (cooked stove top with some random seasonings) and KALE CHIPS! It was a great dinner (they both enjoyed tofu stirfry which is one of my dad’s favorites!)
