Sorry I have been majorly MIA…Its been a busy few days to say the least. I want to thank each and everyone of you who reached out to me on my birthday, it meant so much to me. As I mentioned in my previous post, for some reason birthdays always make me sad, so I mean it when I say you all brightened my day.

My Birthday turned out to be really great. I am all about quality over quantity when it comes to seeing people, hearing from people and spending time with those you care about. For dinner, I went to the Cheesecake Factory because I LOVE their huge salads and the fact you can customize pretty much anthing on the menu
Yes I was up at 4:30 AM on my birthday because I had work at 5 AM. The upside? I was done for the day at around 12:30 so I could enjoy the rest of the day!
Dinner, as I mentioned was at the CCK.
We got some appetizers including the chopped vegetable salad. It was packed wiht lettuce, cucumbers, chedder cheese, eddamame, beets and raddichio. It was delicious! (I picked out the cheese pieces)
For my entree, I went with the Luau salad, minus the wontons and macademia nuts. This is one of my FAVORITE salads from Cheesecake Factory. It was packed with shredded lettuce, grilled chicken, yellow and red peppers, asparagus, carrots and radicchio. I got balsamic vinegar on the side as well
The table also ordered pita and hummus to split which I opted out of, but I have to say the doughy bread was quite hard to resist!
This is my friend, ME and my brothers Fiance, Becca. It was a perfect time!
For my ‘birthday dessert’ it was the cutest thing! Instead of bringing a huge piece of cheesecake or regular cake out, the entire Cheesecake staff came over, singing and brought a mini sundae! I was a bit embarrased, but it was just so cute, I couldn’t help but laugh!

Birthday number 2-Friday night, I went to my parents house for birthday number 2 dinner!!
My mom roasted a whole turkey! It was delicious, tender and juicy (and healthy!) She also made me seperate veggies that were competition friendly (no oil, just spices) Asparagus, cauliflower and brocolli
It was so delicious! My mom is seriously the best cook and I love her for always being so accomodating, no questions asked
Condiments! The aoili garlic mustard from Trader Joes is one of my favorites!
The spread. Turkey, challah bread, roasted veggies, purple potatoes. There was also a huge salad!
My parents were so amazing, they got me some great gifts. One BIG gift, and lots of little ones. Their big gift to me was that they are paying for my photo shoot at Mohegan Sun, which is so amazing of them!
They got me this awesome laundry bag because I always complained that when I do my laundry in my new apartment, I just have to lug a big basket up and down the elevator. I used this bag yesterday and it was PERFECT!
My mom also framed my Oxygen Magazine article which almost made me cry. It was the most thoughtful gift. I am all about thoughful gifts over materialistic ones. The fact that she knew how important and proud I was, got a frame and put itin there, just made me very emotional. Oh and they also got me some cute new kitchen towels! (below the picture)
I also got this Eco Friendly mug, becuase the one I had broke! It comes with a purple top as well to make it “to-go” In addition, I got a new coffee grinder, a new body scrub, and a set of neon colored bowls for the kitchen!
And did I mention the time she took to make my ‘cake’ I was allowed to have some ‘healthy’ cake for my birthday. My mom had a recipe for a low fat creamsicle cake that hit the spot! The bottom is crushed Nilla wafers and low fat margarine. The second layer was blood orange sorbet, and the top was low fat vanilla frozen yogurt. This beauty was finalized by my brother. He is quite the chef, and made it look so professional! IT was garnished with Nilla wafers, sprinkles and strawberries! Needless to say this was the BEST birthday!

Now onto more exciting news. I picked up some Brussels Sprouts from Whole Foods the other day and I think they were the biggest ones I have ever seen!

One big guy and one ‘normal size’ guy. Big or small they were DELICIOUS! I love roasted brussels sprouts. I just put on some TJ’s 21 salute seasoning and roast at 375 for 20 minutes!

Liquids. Water and coffee. Always have with me most of the time!
I roast up lots of veggies at once and keep them on hand in the fridge so I can use them on my salads! This salad was packed with veggies, grilled chicken, roasted brussels sprouts and I top it with mustard and balsamic
And I picked up a new oil! Almond Oil. It’s okay–it doesn’t have much flavor. I was hoping for a more almond extract type flavor, but it just taste like plain vegetable oil. Oh well its still fun to get something new!
