Hey! Welcome back to Monday! It is beautiful here, perfectly sunny, warm, not too hot…Oh just the perfect day for about anything. I was also super excited because yesterday was very similar in weather, and we had fabulous fathers day plans!
Oh yeah, My dad–hes a pretty cool guy. In fact he is the the coolest dad I know.

My dad is selfless, unique, hard working, kind, and gives the best advice of almost anyone I have known in my entire life. He always used to say before my brother and I left the house for school “Don’t be ordinary, make a difference” For 15 years, I heard that quote everyday of my life. It is something I will take with me in any situation, every new place that my life takes me. I will get to the Fathers day Festitivies in a bit.
For now, I want to share some fooood, thats why we love it at Onefitfoodie, right? And here is something I have been loving lately!
Frozen Mango!! I get it at Trader Joes-pre cut and frozen. They taste like CANDY! I love mango so much, and its perfect in the summer time. It also made me want to try experimenting with dried mango in recipes! THIS energy bar recipe sounds so good and I bet it would be even better with small pieces of dried mango!
I let this bowl of frozen mango defrost for about 20 minutes so it wasn’t too slimy, and still had that delicious frozen ‘bite’ to it.
What else have I been enjoying? Kabocha squash!I have been loving this combination right here
Greek yogurt, kabocha squash, cinnamon, truvia and a little bit of almond butter. I mean, whats not to love here. If you think squash + yogurt sounds odd together…you’re right! But its so oddly delicious
Yes, Whole Foods salads never do get old! I was lazy one night this week, and picked up a WF salad. Best decision. I tried some of the eddamame succotash that had dried cranberries, mushrooms, corn and eddamame in a sweet but light sauce–I really enjoyed it!
I also have been loving the addition to peas in my salads! They remind me of being about 7 years old…but when they add a nice sweet crunch to my salad…thats A-OK with me

I also picked this Coconut Secrets vinegar up at Whole Foods because I had been wanting to try it and realized it was on sale! I figured there was no better time.
Raw Coconut Vingar is gluten free, dairy free, vegan and supposedly healthier than apple cider vingar (its ‘competition’) It holds 17 amino acids, minerals, vitamin C, broad spectrum B vitamins and has nearly a nuetral pH. It is made in small batches from the naturally occuring coconut sap. It is unheated, enzymatically alive product, naturally aged for 8 months-1 year. It is an excellent source of FOS (prebiotic that promotes digestive health) source
It was really delicious! It did remind me quite a bit of apple cider vinegar but had a much sweeter taste and less of a ‘zing’ I want to experiment mixing it with different types of oils and mustard to make great salad dressings!
****I just made this salad dressing up and have NOT tried it yet, but I think it would be delicious…if anyone decides to make it, please let me know how it turns out
Coconut Berry Summer Dressing
1/4 C coconut oil
1 T coconut vinegar
1/2 tsp raw honey or agave nectar
1/4 tsp sea salt
1 T dijon or honey mustard
1 T rasperry or blackberry jam
I think this salad dressing sounds fabulous to dress up a salad in the summer time!

Onto Fathers day! My family and I went out to Legals Harboside in the seaport district of downtown Boston for an early dinner. It was the most picturesque day and there is no where else I wanted to be but on the water, watching the sun set. When I say ont he water, I mean, it it was too windy, we would have been wet with waves. The seaport district in Boston is becoming the new ‘happening’ place to be. It is teaming with tourists and Bostonians alike, and a new restaurant opens on the harbor almost every month! I had been wanting to try Legals Harborside there for a while, so I was thrilled thats where we went!
We started with a few ‘small crostini plates’ ( and an unpictured glass of Santa Margherita pinot grigio) The first one that arrived was the ahi tuna, sweet pepper, onion, roasted red pepper vinaigrette
The second crostini was salmon gravlax which was smoked salmon layered over creamy cream cheese topped with fresh dill, capers and red onion
We also ordered grilled pita with homemade hummus
The third crostini was whipped gorgonzola and fig jam. This was was a crazy combination of flavors, surprising at first, and then it was quite pleasant and sweet! It took me a while to get used to this one!
Favorite #2. Im a Jewish gal, I love my smoked salmond + cream cheese + capers! Classic crostini for me!
favorite #1! I LOVE ahi tuna and this was the most amazing combination. I was afraid that the red pepper would be overpowering, but it was not at all. The seafood was clearly the star of the show even though it did have a nice dressing on it. The tuna was fresh, flavful and buttery smooth!

I knew we were getting lots of appetizers (I still have one to share that they forgot about so brought it out later) I ordered the “Big bowl” salad which was romaine with chickpeas, asparagus, radishes, cucumbers, huge homemade cripsy croutons, fresh parmesan reggiano cheese, arugula, grape tomatoes and I topped it with grilled shrimp. The salad was perfect, just what I wanted and teh basil vinegrette was delicious as well!
I also ordered a side of steamed spinach, which was a bit tinier than I thought, but nonetheless a perfect extra veggie addition to my salad
The shrimp cocktail that FINALLY came! They ‘forgot’ about it and brought it toward the end of the meal, but it was so worth it! Look out stinkin’ cute it is in the jar! They made it look like a bloody mary! I love when food is presented in such fun ways that really make you say “wow” pleasing not only to the palate but to the eye as well!
The shrimps were so fresh and juicy, they had that classic “pop” right when you bit into it!
Fathers day was a HIT. My brother and I got my dad some Lululemon Shorts and a blue top as well. He loves Lululemon workout gear and he recently has lot quite a bit of weight, so we not only wanted to support him in his new and fabulous accomplishment, but also get him something that we knew he would love and put to great use!

Do you enjoy making or eating food that is pleasing to the eye as well as to the palate? If you recall when I went to Prana Raw Cafe the other month, that was by far some of the most beautiful food I have ever seen! I LOVE seeing food presented in fun, unique and fresh ways
Beach, Lake, City, Country? I am a mix between city and beach! If I could go to a beach in the city that would be ideal!
