Coconut-Cinnamon Pancakes (Grain free!)

Pancakes…Really what’s not to like? Those people who are all “ehhh I don’t like pancakes” REALLY!?! I don’t believe them….There has to be something deeper going on if you really have a dislike for one of the most delicious breakfasts ever. I’ve been getting bored, real bored with breakfast. It is by far one of my favorite meals of the day, yet I seem to get stuck in a rut of the same thing over and over again–which trust me, I try to avoid, but it seems I have just gotten wrapped into making the same thing the night before and bringing it to work (oats or oat-bran with a mix of flax, eggs/eggwhite, fruit of some sort and almond milk) I cook the mixture the night before and pack it up in a mason Jar.

Now I know what you’re thinking…that looks REALLY GOOD! And it is, It is…but have it day after day and it gets boooorrrinnnng. It’s a simple recipe really. I cook the oats (1/4-1/3C dry in water) add in a TBSP of flax. Meanwhile I cook up 3 egg whites and 1 whole egg. I add the egg to the oats in a mason Jar, add in some cinnamon or nutmeg or both. Add the berries and close it up! In the morning I add in the almond milk and smoosh it all around. Its delish. It’s filling and Keeps me fueled with a proper balance of carbs, protein, good fat and fiber.

Weekends roll around and it’s a whole new ball game. I have MORE TIME. And I will gladly take that time to make myself some darn pancakes. I will take those few extra minutes to take a peek around my kitchen and use ingredients to switch things up.

Before I get into the pancakes, I have to mention this ‘new to me’ restaurant’ I went to the other day. I feel this post is all over the place, but bear with me–its been one of those weeks and I just NEED to share some of this other really important stuff with you, you feel me?!

So my friend took me to this new place called “SAUS” located in Fanueil Hall in Boston.  It is pretty much the coolest place ever. Well, not ever, but it’s the type of place you want to sit and order some good food and just sit. For hours. The food is all made from scratch in a casual counter setting. They’re ‘thing’ is the sauce. They have over 15 homemade sauces on the menu including homemade ketchup, mayo and gravies. Their menu ranges from the craziest combinations of poutine to lighter options like grilled chicken in organic, local whole grain pitas

I was ttheirsmack dab in the middle of the day, so I wasn’t that hungry that I needed a whole meal (and I had just eaten not knowing we were taking a pit stop by this place) I was deciding between two sides and then just said ‘screw it’ and got them both! She insisted that I get the shaved Brussels sprouts which I got with the homemade parsley vinaigrette.

I also got the apple cabbage slaw which I don’t even know what was in their but it was OUT OF THIS WORLD. I was planning on saving some for later-but we all know how that goes. I ate the whole thing. Both sides in about 5 minutes.

Oh and this beauty? The VEGGIE CROQUETTE:  potato cauliflower mash, carrots, vinaigrette

Whole wheat pita or mesclun greens and samurai saus.   With all of that said–go to Saus if you are in the Boston area. You will be blown away!

You know where else you should go? PARISH CAFE. This is another one of my “GO TO” restaurants in Boston. My favorite thing on the menu (as far as appetizers go) is the hummus platter. Roasted red peppers, pickled onions, kalamata olives, feta cheese, warm pita AND Hummus? I. Just. Can’t Its ridonkulous.

Okay–enough with that…I know why you’re here…the pancakes, right? Well, then lets move forward. It was Saturday and I wanted to take some extra time to make an extra special Breakfast. No-no one exciting was over my apartment. It was me and my pancakes. I put on some “Robyn” Radio on Pandora which I have been obsessed with lately. Seriously. The girl can SANNNGGGG. What ever happened to the song “show me love”

Thats the best. Can you tell I am all over the place? Well, my life is a little all over the place…all GREAT things in the horizon but just all over the place–like this post. You know what stays consistent and keeps a smile on my face? Pancakes. AND also when big guys are walking tiny little dogs—could you just die when you see that?!

Okay…back to the pancakes…They never fail to make me smile so here ya go!

The best part of these ‘cakes is that they are TOTALLY CUSTOMIZABLE to you’re liking! Don’t like blueberries or banana? Okay–choose another fruit. OR forget the fruit all together and throw in some dark chocolate chips or white chocolate chips or bacon or nuts. Go wild my friends…live on the edge. The recipe below is how I made mine and the nutritional facts represent this recipe BUT feel free to adjust! I made these for breakfast and crushed a great workout (yes I just said I CRUSHED my workout) Oy.

Easy Peasy, grain-free pancakes. Add whatever fruit you like and whatever toppings you like. These were fluffy and DELICIOUS. So easy I can hardly stand it. Have some extra time? Treat Yo’ Self! <3

Ingredients
  • 2T coconut flour (I have organic)
  • 1 whole egg
  • 2 egg whites
  • ½T cinnamon
  • 1T flaxseed meal
  • 1T Greek Yogurt
  • 1 packet of stevia (optional)
  • ¼C blueberries
  • ⅓ banana
  • pinch of sea salt
  • ½tsp baking powder
  • 2T almond milk

Instructions
  1. Place coconut flour, cinnamon, baking powder, salt, flaxseed and stevia in a bowl. Mix well.
  2. Add in eggs, almond milk, Greek yogurt.
  3. Mix everything until batter is well incorporated. Let sit for 3-5 minutes.
  4. Meanwhile, heat a skillet under medium heat and use fat of choice (coconut oil, olive oil, olive oil spray, butter etc) to lightly coat the bottom
  5. Pour a bit of the batter in the pan into your pancake size of choice. I made about 5 medium sized cakes but you can make them smaller (silver dollars!) or larger (ihop style!) This is up to you!
  6. Add in fruit of choice once batter is poured in the skillet. I used blueberries and some banana slices, sliced thin.
  7. When batter begins to bubble, flip and cook an additional 2 minutes until golden brown.
  8. Place on a pan when cooked through and top with whatever you would like!
  9. SUGGESTIONS: Nut butter, coconut oil, maple syrup, butter, fruit, greek yogurt, sprinkle of unsweetened cocoa powder.
  10. ENJOY! 🙂
