I never really understood what fried rice was. It didn’t seem deep fried? It seemed more just like rice mixed with veggies and some egg. Chinese food in general doesn’t really appeal to me probably because I have a garlic intolerance and there is garlic in EVERYTHING, so the idea of eating rice that is fried doesn’t really turn on my taste buds.
Rice, though? I LOVE rice. Its been around for hundreds of years and is one of the most versitile grains out there!
I’ve used rice to make breakfast by adding some almond milk, vanilla extract and cinnamon.

I’ve used rice to make a festive side dish by adding diced butternut squash, dried cranberries and walnuts (hello, Thanksgiving side dish!!)
It provides an excellent source of carbohydrates, easy on the stomach and basically can taste like whatever you add to it!
I was in a rush after my workout a few weeks ago and was out of my usual post workout snack (2% Greek yogurt and an ezekiel english muffin-which by the way is my FAVORITE meal right now post workout) Anyway, I was in a rush and I had to use what I had in my fridge to eat something quick. I aim for ~25/30g protein and carbs post workout and minimal fat. As long as I am getting in the carbs and protein, AND that it tastes good–I’m pretty easy going when it comes to what I stuff my face with)
So I had some leftover brown rice in the fridge that I made the night before (I have been making brown rice mixed with a bit of grassfed butter and himalayan sea salt and it is AMAZING. Anyway. I used about 3/4C brown rice, 1 egg and 1 egg white (I wanted to keep the fats lower since this was a post workout meal but otherwise I would have used two whole eggs)
Heat up a skillet over medium heat and add about 1/2T olive oil. Add in the rice and wait until the rice is a bit warm (should take about a minute or so) After the rice is heated through, the egg and egg white goes right in the same pan and mix mix mix away with a wooden spoon. The egg cooks FAST so this part of the process takes about 1 minute!
After the egg is mostly cooked through, this is where you can get creative with anything else you want to add to the dish! I chose to add in some pre cooked chicken breast and spinach
It’s honestly, one of the most simple dishes I have made in a while and is SO good! Really really good.
- 3/4C brown rice
- 1/2T olive oil
- 1 egg
- 1 egg white
- 1C spinach
- 2 oz chicken breast
- Heat a skillet over medium heat and add in the olive oil
- Add in rice
- Once rice is heated through, add the egg and egg white and mix well. This should take about 1 minute so stay close by!
- Add in spinach and chicken and mix well until the rice is evenly distributed.
- ENJOY!
